Buttermilk Pie

It sounds gross, right?  Buttermilk pie is a Southern staple I’ve never been super keen to try.  The one time I did try it, it was at a place known for pie and for their buttermilk pie in particular (*cough* Scratch *cough* overrated *cough*).  It was not good. However, I was doing a birthday dinner for someone, and they requested buttermilk pie, so buttermilk pie I would make.  Buttermilk pie should fire its marketing people and rebrand itself as lemon custard pie, because that’s what it tastes like.  When made properly, it’s very good.I got the filling recipe from Southern Living, but used my favorite Bon Appetit crust recipe.Ingredients1 1/2 cups sugar 3 tablespoons all-purpose flour 3 large eggs 1 cup buttermilk 1/2 cup butter, melted 1 tablespoon loosely packed lemon zest 3 tablespoons fresh lemon juice 1 teaspoon vanilla extract Basic Tart Dough (see below) Directions1. Preheat oven to 350°. Whisk together first 2 ingredients in a large bowl. Whisk eggs and next 5 ingredients into flour mixture.2.  Roll out Basic Tart Dough and place in a 9 inch pie plate. Flute edges. Pour filling into crust.2. Bake at 350° for 35 to 45 minutes or until almost set, shielding edges with aluminum
